I can understand about the "clay pot rice noodle " would be tempting, but why "Crossing the Bridge" rice noodle would be a good seller? I guess I don't know the origin and story behind this "Crossing the Bridge rice noodle thing.... Could it refer to the rice noodle being very lengthy?

The ingredients - vegetables, thinly sliced meat and rice noodles - are placed in a bowl and then cooked when the hot broth is added. Apparently, the name comes from a wife carrying dinner to her husband across the bridge. This was his favorite meal and it got nicknamed "Across-the-Bridge Noodles."
