Eating our way through Lima, Peru: tiradito (thinly sliced raw fish in lime juice), ceviche (raw fish in lime juice with onions and aji), tequenos (Peruvian style spring rolls with crab), chaufa (Peruvian-Chinese style fried rice), conchitas a la parmesana (scallops cooked with parmesan cheese), causa (mashed potatoes stuffed with avacado and crab/shrimp) and more.
