Besides a Department of Homeland Security, this is one department that every sovereign body really needs.We didn't have a chance to inquire about membership. Could it really be that there is a special department to manage and gather swallow's nests in Hoi An? It was a large building...must be a lot of swallows.

Our next stop, a wine bar, was on this street...an ominous sign? Do we stay or do we go? We stayed, and enjoyed some tasty proscuitto and local red wines. We took note that the locals were drinking prosecco (Italian sparkling wine) instead. We later learned that prosecco goes very well with smoked meats.© www.uncorneredmarket.com
